Top 10 Fall Meals 'Round Here

How about some fall menu ideas today? I thought I'd share some of my fave fall meals here and give you the recipes to a few of them at least. Hope you enjoy!

1. Creamy corn chowder *recipe below

In a crockpot, combine 1/2 bag frozen miraproix mix, 1-2 large bags of frozen corn (I like to mix yellow and white corn; err on the side of sweet), 1/2 bag frozen diced hashbrowns, 1 pint heavy cream (can use half and half or whole milk too), 1/2 stick butter, and 1-2 cups of water. Add 2 chicken bouillon cubes, red pepper, black pepper, and salt to taste. May add a touch of garlic if you'd like. Cook on high for 3 hours or on low for 6 hours. Garnish with crisp bacon pieces and shredded asiago cheese; serve with crispy pieces of garlic toast. (If I'm making it vegetarian for my daughter, I leave out the bouillon cubes and add the garlic for flavor.)

In a large stock pot, combine 1 large container whole mushrooms, 1 bag frozen pearl onions, 1 large can whole peeled tomatoes, 1/2 bag carrot slices or whole baby ones, 1 can tomato paste, and 2 cups water. Bring to a boil and simmer until all veggies are tender. While it's cooking, shred a rotisserie chicken and add meat to the simmering soup. Fry 6-8 slices of bacon until crisp and drain. Drain most of grease from skillet, but don't scrape. Add 1-2 cups red wine to skillet and deglaze by bringing to a low boil and scraping pan as it heats. Pour mixture into soup. Return soup to low heat and allow flavors to meld for at least 1/2 hour.  Serve soup garnished with bacon pieces and crusty French bread for dipping.

In a crockpot, combine leftover shredded roast beef and juices (I usually make this the next day after I make a roast - I do not use any veggies from the day before because they get mushy), 1/2 bag frozen miraproix mix, 1/2 bag frozen corn, 1-2 bags vegetable soup/stew veggie mix (your preference depending on whether you like big or small pieces of vegetables - I like lima beans, green beans, potatoes, carrots, and okra as a mix), 2-3 beef bouillon cubes, 1 large can whole tomatoes, 1-2 bay leaves, and 1 large can of tomato juice.  Season with salt, black pepper, and red pepper if desired. If it's not soupy enough, you can always add water as needed. Cook on low for 3 hours or on high for 6 hours. Serve with grilled pimiento cheese sandwiches for real Southern style comfort food. :)

9. Chicken tortilla soup *recipe below

In a crockpot, combine 3-4  frozen chicken breasts, 2 cans black beans drained, 1/2 bag frozen miraproix mix, 1 small can of diced green chiles, 1 can diced tomatoes, 1/2 bag frozen corn, and 1 large can tomato juice. May add small drained can of sliced black olives if you wish.Add chili powder, cumin, and red pepper flakes to taste. Cook on low for 3 hours or on high for 6 hours. Once mixture is cooked, use two forks to shred pieces of chicken. Garnish each bowl with shredded cheddar, sour cream, and crushed tortilla chips. Serve with cheese quesadillas if desired.

  1. OH YUMMMMMMM!!!!!! we have really taken a break from cooking lately living on junk so I decided to make poor man's steak tomorrow night -its a yummmmy dish that has to be prepped the day ahead. Thanks for sharing your recipes! I printed 2, but what is miraproix mix?

    1. It's a frozen seasoning mix that has diced up bits of onion, celery and green pepper. I'm just into the convenience of dumping in the frozen bag (it's like $1 a bag at Kroger) instead of buying fresh and spending all that time chopping. :)
