Planners + pasta

I made a decision about my new Heidi Swapp planner that I mentioned in a post last week.

I'm going to use it as a creativity planner - making notes about podcasts and crops, planning pages and projects, and scheduling blog posts and creative time. It'll be very casual and really a working planner for me. I plan on using the photo pockets for pics of my finished projects. Won't it be cool to look back at the end of the year and see all I've accomplished? I'm pretty excited about it and have started making notes for January thru March. I'll share some pics of it soon.


Tonight, I made dinner for my girl and her boyfriend. They come over once or twice a week to eat. Since Kelsey is a vegetarian, I plan something meatless that she'll enjoy.  Tonight, it was fettucini Alfredo from scratch. Here's a pic & the recipe is listed below. It's amazing!


1 box fettucini cooked according to directions
1/2 bag frozen peas
1 jar sundries tomatoes, drained and sliced
Alfredo sauce

To make the sauce:
I stick unsalted butter
2 bricks cream cheese
1/2 pkg Gorgonzola cheese
3/4 cup shredded asiago cheese blend
1 pint heavy cream
Red pepper flakes, pepper, parsley, salt, all to taste
2 teaspoons minced garlic

Melt butter in medium saucepan with minced garlic. Add cream cheese in chunks and melt slowly. Stir frequently and add Gorgonzola and Asiago cheeses. When cheese is smooth, add heavy cream slowly while stirring. Sprinkle in seasonings to taste. Stir periodically as you let it heat through and thicken. This makes enough sauce for 2-3 batches of noodles depending on how saucy you like your pasta. I usually serve it with crusty French bread and my own mix of 'bread dip.' It's decadent and yummy comfort food. Hope you enjoy it!

  1. I love that idea for the planner! I've seen it in stores and it is so cute, but I didn't purchase it. I have more calendars than I can use so didn't know of a use for the planner. I look forward to seeing pictures after you've started it.

  3. Thanks Lisa! I'm excited about it, and now that I've put it 'out there' I'm accountable for it. Haha! I'll try to post some pics of it this weekend. Tracie, it was really good...like lick the bowl good. :)
